Ashlynn Emanoff on the F/V Fairweather, homeported in Dry Bay, hands up frozen coho salmon to Jacob Brendel at the Samson Dock this morning. The Fairweather is one of a number troll vessels in Southeast with the ability to process and blast freeze fish at sea. Fishermen on these boats head, gut and pressure bleed each coho salmon before placing them in freezers installed in their insulated fish holds. The freezers blast fish with fans at temperatures as cold as -40 degrees Fahrenheit. Once the fish are frozen solid, fishermen dip them in seawater, and freeze them again with the seawater glaze. The fish are offloaded and packaged by hand to be shipped to Washington state and distributed to restaurants and retailers across the country.
